The 2019 Vintage wine harvest is complete! The initial fermentations have finished and as of December 6th, the wines have all been barreled down. At this time, the Chardonnay, Merlot, and Cabernet Sauvignon are safely resting, undergoing malolactic fermentations which we hope will be completed soon. This harvest started and ended late with the Napa Valley experiencing unprecedented warm weather through October and into November. The fruit had extra hang time which helped develop more intense and complex flavors.
After many requests for Salexis Wines Merlot, John and Ann have decided to return to their roots and produce one this year. Grapes have been sourced from the Carneros appellation of the valley. John will craft this wine in the Bordeaux style.
The 2018 Vintage Chardonnay and Cabernet Sauvignon have been in barrels now for well over a year. They are nearing the downhill slide towards bottling which will take place in June. At this point, the oak aroma and flavor extraction has reached its peak and will start coming together with the fruit characters thus becoming harmonious in the months to come.
