This Cabernet Sauvignon is a very rich and full wine on the palate with a myriad of fruit elements of blackberries, raspberries, and black currants all surrounding a complimentary toasty French oak. With proper cellaring, this wine will continue to improve for 15 to 20 years.
After deciding to forego making Cabernet Sauvignon from the 2020 vintage due to smoke tainted grapes, we are very pleased to announce the release of the 2021 Salexis Wines Napa Valley Cabernet Sauvignon.
Spurred on by a smaller than normal crop and a very warm spring and summer, the 2021 harvest began on September 21 and was completed on October 2. Never before had we picked our Cabernet Sauvignon and Petit Verdot grapes in September.
What is very exciting about this wine is the inclusion of Cabernet Sauvignon Clone #30 into the blend. Also known as the See Clone since it was planted in Yountville vineyards of the See family, (of See’s Candy fame), in the early 1970s, it has the smallest berries of Cabernet Sauvignon that I have ever had the pleasure of working with. This increases the skin to juice ratio, which produces more concentrated flavors.
As has become our practice, we co-ferment a small percentage of Petit Verdot to further the establish synergistic flavors and tannins. Later in the wine’s life, we chose to add additional Petit Verdot and Merlot as well.
