Salexis Napa Valley Cabernet Sauvignons are made with early approachability and enjoyment in mind. It is produced from a combination of vineyards for several sub appellations of the Napa Valley. Grown in the eastern edge of the Napa Valley, the vineyard was planted in 1997 with our recommendations of rootstock, clonal material, row direction, vine density, and trellising system. Using classic Bordeaux methodology, the grapes are destemmed and crushed and are cold soaked for 7 days. The wine is fermented rapidly and left on the skins for a total of 20 to 24 days. The wines are then aged in Chateau style French oak barrels (66% new) for 18 to 22 months. As is our goal of producing flavorful, rich, powerful, and balanced wines, the 2015 is blend of 92.1% Cabernet Sauvignon and 7.9% Petit Verdot. This Cabernet is well balanced with soft tannins and a long lingering finish. This wine is delightful to enjoy now but will continue to improve with cellaring for 8-10+ years.
